This year St. Patrick’s Day falls midweek, which means most of us will spend the day balancing the celebration with every day life. If you don’t have extra time to spend out at local pubs waiting for food, does that mean you should give up on enjoying a special Ireland-inspired meal? Of course not— especially when you’ve got your slow cooker to help you out!

As a substitute for bacon, corned beef was used by Irish-American immigrants in the late 19th century, leading to the creation of the Irish-American tradition of corned beef and cabbage.
A popular Irish dish that sometimes gets forgotten by us Americans, is Irish Stew. You can make it with beef, but if you want to make it more authentic try it with lamb (mutton). Or if you prefer beef, perhaps add a bit of Guinness to the mix. 😉
